Hand-graded Acipenser gueldenstaedtii, matured nine years on a single Italian coast farm. Firm, dark amber pearls flecked with gold and jade, a long mineral finish that holds. Serving Recommendations

Serve Royal Ossetra well-chilled and keep the tin over a bowl of ice while serving. Use a non-metal spoon, and taste a small spoonful on its own first to appreciate the mineral aroma and toasted finish. Then serve on blinis, toast points, or warm potato chips with a light dollop of crème fraîche or unsalted butter, finished with chives if desired. Add caviar after cooking and avoid heat to preserve the firm texture.
