Acipenser gueldenstaedtii, matured nine years on a single Italian coast farm. Firm, dark-amber pearls hand-graded the day they're harvested. The one tin most of our customers order first, and the one they reorder.
The colour runs from deep black-brown to slate grey, flecked with gold and jade where the light catches. Cold from the tin, the pearls roll, then yield. They release first cream, then walnut, then a long mineral finish that holds. The aroma is sea air and warm toasted grain. The open tin scents the room.
Sourced from a single farm on the Italian coast. The sturgeon are matured for nine years before harvest, and the roe is malossol-cured with sea salt within hours of grading. Grade 000, our largest pearls of the season. CITES-traceable sturgeon caviar, with the cold-chain paperwork to match. The same caviar quietly served in restaurants you already know by name.
