Serving Recommendations

Serve both caviars well-chilled and keep the tins over a bowl of ice while tasting. Start with a small spoonful of each on its own, then compare them on blinis, toast points, or warm potato chips with a light dollop of crème fraîche or unsalted butter. Finish with chives and, if desired, a touch of lemon zest. Use a non-metal spoon and add caviar after cooking to preserve the pop and clean flavor.
